Sevruga caviar is one of the highest-priced varieties of caviar, eclipsed in cost only by the Beluga and Osietra varieties. It is harvested from various critically endangered sturgeon fish species, known for their small, grey-coloured eggs.

Sevruga Caviar can only be from the Acipenser Stellatus Sturgeon being the smallest of the Sturgeon fish species.

Sevruga offers a complete and delicate flavour appreciated by many, lightly salted at 3.5% known as “Malossol” with a Caviar roe size of 2.9mm in diameter.

Sevruga matures between 7-10 years of age and lives in a semi-wild environment of natural lakes.

Sevruga can grow to 75 Kilograms and 2.2 meters in length.

It is native to the Black, Azov, Caspian and Aegean Sea basins, however, it has been extirpated throughout most of its range.

Stellate sturgeon was once the most common and fastest to reproduce. Sevruga caviar is the most commonly found of the sturgeon caviars and the least expensive and smaller of the three main types of sturgeon caviar, Beluga, Osetra and Sevruga.

About half of all caviar production comes from Sevruga.

Sevruga caviar eggs are a pearlescent light grey to dark.

The flavour is more pronounced and often described as saltier, but it can vary depending on the origin of the fish.
