Three main types of Sturgeon Caviar
Caviar is the unfertilised eggs of Sturgeon fish.
It is prepared by removing the egg sac from the freshly caught Sturgeon fish and passing them through a fine sieve to separate the eggs and remove the membrane and fat. Three and a half per cent, by weight, of Sea salt is added to preserve the eggs and bring out the flavour.
The denomination Malossol (a little salt) on Caviar tins indicates the low content of salt in high-quality Caviar.
The Caviar is vacuum packed, date labelled and chilled.
It is then graded according to the size and colour of the eggs.
The three main varieties of Caviar are Beluga, Osietra and Sevruga.
