Three main types of Sturgeon Caviar
Caviar is the unfertilised eggs of Sturgeon fish.
It is prepared by removing the egg sac from the freshly caught Sturgeon fish and passing it through a fine sieve to separate the eggs and remove the membrane and fat. By weight, three and a half per cent of Sea salt is added to preserve the eggs and bring out the flavour.
The denomination Malossol (a little salt) on Caviar tins indicates the low salt content of high-quality Caviar.
The Caviar is vacuum-packed, date-labelled and chilled.
It is then graded according to the size and colour of the eggs.
The three main varieties of Caviar are Beluga, Osietra and White Sturgeon.
Caviar, dubbed black pearls, is a food delicacy without parallel for discerning gourmets.
